30g ginger, rough chopped
30g fresh lemongrass, rough chopped
30g shallot, peeled and rough chopped
30g garlic (6-7 cloves)
30g or 1 large jalapeno, with seeds (adjust for heat)
30g green bell pepper (about ¼ of a medium bell pepper)
Zest of 2 limes
1¼ tsp cumin
1¼ tsp coriander
½ tsp turmeric
1 tsp salt
1¼ tsp white pepper
2 cups cilantro stems
Directions
- Add ingredients to a food processor and process into a paste, scraping down the sides halfway through.
- Store in an air tight container.
