Thai Green Curry Paste

Ingredients

  • 30g ginger, rough chopped

  • 30g fresh lemongrass, rough chopped

  • 30g shallot, peeled and rough chopped

  • 30g garlic (6-7 cloves)

  • 30g or 1 large jalapeno, with seeds (adjust for heat)

  • 30g green bell pepper (about ¼ of a medium bell pepper)

  • Zest of 2 limes

  • 1¼ tsp cumin

  • 1¼ tsp coriander

  • ½ tsp turmeric

  • 1 tsp salt

  • 1¼ tsp white pepper

  • 2 cups cilantro stems

Directions

  • Add ingredients to a food processor and process into a paste, scraping down the sides halfway through.
  • Store in an air tight container.
