Ingredients

  • 2 lbs ground beef or pork

  • 1 tbsp vegetable oil

  • 1 clove of garlic, minced

  • 1 medium onion, diced

  • 1 medium red pepper, diced

  • 1 can of garbanzo beans, drained

  • 1 zucchini, sliced

  • 4 medium potatoes, peeled and cubed

  • 5 carrots, peeled and sliced

  • 1 cup of water

  • 1 can of tomato sauce

  • 1 can stewed tomatoes

  • Salt and pepper to taste

Directions

  • In a large skillet, cook meat, strain fat, and set aside
  • Heat oil in skillet and sauté onions first for 2-3 minutes
  • Add garlic and sauté for 1-2 minutes
  • Add peppers and sauté for an additional 2-3 minutes; onions should be translucent
  • Add potatoes and carrots and sauté for 4-5 minutes
  • Add water, tomato sauce, and stewed tomatoes and bring the heat up to medium for a low boil, cover and cook for 10 minutes
  • Add garbanzos, zucchini, and prepared meat and reduce heat to medium low, cover, and simmer until potatoes and carrots are done, stirring occasionally
  • Add salt and pepper to taste
