2 lbs ground beef or pork
1 tbsp vegetable oil
1 clove of garlic, minced
1 medium onion, diced
1 medium red pepper, diced
1 can of garbanzo beans, drained
1 zucchini, sliced
4 medium potatoes, peeled and cubed
5 carrots, peeled and sliced
1 cup of water
1 can of tomato sauce
1 can stewed tomatoes
Salt and pepper to taste
Directions
- In a large skillet, cook meat, strain fat, and set aside
- Heat oil in skillet and sauté onions first for 2-3 minutes
- Add garlic and sauté for 1-2 minutes
- Add peppers and sauté for an additional 2-3 minutes; onions should be translucent
- Add potatoes and carrots and sauté for 4-5 minutes
- Add water, tomato sauce, and stewed tomatoes and bring the heat up to medium for a low boil, cover and cook for 10 minutes
- Add garbanzos, zucchini, and prepared meat and reduce heat to medium low, cover, and simmer until potatoes and carrots are done, stirring occasionally
- Add salt and pepper to taste
