Curried Chicken with Peas and Rice

2 tbsp butter
1 lb boneless skinless chicken breast
1 can diced tomatoes, 15 oz
1 pkg onion soup mix
1 tbs curry powder
8 fl oz plain low-fat yogurt
1½ cups rice
1 cup frozen peas
1½ cups water
Directions
- Preheat oven to 375 degrees
- In a large oven safe skillet or Dutch oven, melt butter over medium heat
- Add chicken and brown well on both sides, then set aside
- Add tomato, onion soup mix, yogurt, and curry and mix well
- Add rice, peas, and water and stir
- Bring to a boil, then reduce heat and simmer for 5 minutes.
- Place chicken on top of rice
- Cover and bake 45 minutes or until chicken and rice are done
