Curried Chicken with Peas and Rice

Ingredients

  • 2 tbsp butter

  • 1 lb boneless skinless chicken breast

  • 1 can diced tomatoes, 15 oz

  • 1 pkg onion soup mix

  • 1 tbs curry powder

  • 8 fl oz plain low-fat yogurt

  • 1½ cups rice

  • 1 cup frozen peas

  • 1½ cups water

Directions

  • Preheat oven to 375 degrees
  • In a large oven safe skillet or Dutch oven, melt butter over medium heat
  • Add chicken and brown well on both sides, then set aside
  • Add tomato, onion soup mix, yogurt, and curry and mix well
  • Add rice, peas, and water and stir
  • Bring to a boil, then reduce heat and simmer for 5 minutes.
  • Place chicken on top of rice
  • Cover and bake 45 minutes or until chicken and rice are done
