⅔ cup butter or margarine, softened
1½ cups sugar
2½ cups flour
1¼ tsp baking powder
1 tsp baking soda
1 tsp salt
2 mashed over ripe bananas
⅔ cup milk (if using a milk alternative, use 1 cup)
2 eggs
Directions
- Preheat oven to 350 degrees and butter 2 loaf pans
- In a bowl, mix butter and sugar
- While mixing, add flour, baking powder, baking soda, and salt
- While mixing, add eggs, then bananas, then milk
- Divide the batter between the two loaf pans
- Place the loaf pans in oven and bake for 35 minutes (see notes); be sure to test for doneness
Notes
- Substitutions for butter and milk with other varieties work great (smart balance, almond/soy milk, etc.)
- Loaf Pans: 350 degrees for 35 minutes
Dark Brownie Pans: 325 degrees for 23-25 minutes
Dark Mini Brownie Pans: 325 degrees for 21-23 minutes
