Ingredients

  • ⅔ cup butter or margarine, softened

  • 1½ cups sugar

  • 2½ cups flour

  • 1¼ tsp baking powder

  • 1 tsp baking soda

  • 1 tsp salt

  • 2 mashed over ripe bananas

  • ⅔ cup milk (if using a milk alternative, use 1 cup)

  • 2 eggs

Directions

  • Preheat oven to 350 degrees and butter 2 loaf pans
  • In a bowl, mix butter and sugar
  • While mixing, add flour, baking powder, baking soda, and salt
  • While mixing, add eggs, then bananas, then milk
  • Divide the batter between the two loaf pans
  • Place the loaf pans in oven and bake for 35 minutes (see notes); be sure to test for doneness

Notes

  • Substitutions for butter and milk with other varieties work great (smart balance, almond/soy milk, etc.)
  • Loaf Pans: 350 degrees for 35 minutes
    Dark Brownie Pans: 325 degrees for 23-25 minutes
    Dark Mini Brownie Pans: 325 degrees for 21-23 minutes
