Strawberry Pie

Pillsbury's Pie Crust
1 qt strawberries, cut into quarters, divided
¾ cup sugar
Dash of salt
4 tbsp corn starch
¼ tsp red food coloring (optional)
Whipped topping (optional)
Directions
- Prepare pie crust according to package instructions, then set oven temperature to 350 degrees
- Over medium-low heat, add sugar, cornstarch, and salt to a sauce pan and mix for 4-5 minutes
- Add half the strawberries and food coloring and mix for 3-4 minutes; the strawberry mixture should be fairly thick and translucent
- Add remaining strawberries and stir together for 1 minute
- Transfer the strawberry mixture to the prepared pie crust
- Place pie in the oven and cook for 10-12 minutes
- Remove the pie from the oven and let cool, then place in the refrigerator to set for at least 1 hour; serve with whipped topping
Notes
- For variety, you can substitute strawberries with blueberries, or any other type of berry.
