Strawberry Pie

Ingredients

  • Pillsbury's Pie Crust

  • 1 qt strawberries, cut into quarters, divided

  • ¾ cup sugar

  • Dash of salt

  • 4 tbsp corn starch

  • ¼ tsp red food coloring (optional)

  • Whipped topping (optional)

Directions

  • Prepare pie crust according to package instructions, then set oven temperature to 350 degrees
  • Over medium-low heat, add sugar, cornstarch, and salt to a sauce pan and mix for 4-5 minutes
  • Add half the strawberries and food coloring and mix for 3-4 minutes; the strawberry mixture should be fairly thick and translucent
  • Add remaining strawberries and stir together for 1 minute
  • Transfer the strawberry mixture to the prepared pie crust
  • Place pie in the oven and cook for 10-12 minutes
  • Remove the pie from the oven and let cool, then place in the refrigerator to set for at least 1 hour; serve with whipped topping

Notes

  • For variety, you can substitute strawberries with blueberries, or any other type of berry.
