Quick Garlic Noodles

3 tbsp butter + 1 tbsp olive oil
8 fresh garlic cloves, minced
2 scallions, thinly sliced (greens only)
1 tablespoons fish sauce
2 tablespoons oyster sauce
1 tablespoon granulated sugar
¼ cup shredded parmesan cheese (optional)
8 oz noodles (see notes)
Fried garlic, for topping
Directions
- Bring a large pot of water to a boil and cook the noodles according to package directions; drain, toss with a little olive oil, and set aside
- While the water is coming to a boil, heat a skillet on medium-low
- Add the butter, oil olive, garlic, and scallions to the skillet and simmer lightly for 5-7 minutes, stirring often; the garlic should barely sizzle here, you don't want it to brown
- While the garlic is going, mix the fish sauce, oyster sauce, and sugar in a small bowl
- When the garlic is cooked, bring the skillet to a medium-high heat and stir in the prepared sauce; let cook for 30 seconds
- Add the prepared noodles and toss with parmesan cheese (optional); let the noodles cook for a minute so they soak up all that flavor
- Top with fried garlic and serve immediately
Notes
- You can use a lot of different kinds of noodles; Chuka soba noodles, egg noodles, Hong Kong noodles, spaghetti, or even angel hair pasta will work here.
- This recipe can easily be doubled if you want leftovers.
