Quick Garlic Noodles

Ingredients

  • 3 tbsp butter + 1 tbsp olive oil

  • 8 fresh garlic cloves, minced

  • 2 scallions, thinly sliced (greens only)

  • 1 tablespoons fish sauce

  • 2 tablespoons oyster sauce

  • 1 tablespoon granulated sugar

  • ¼ cup shredded parmesan cheese (optional)

  • 8 oz noodles (see notes)

  • Fried garlic, for topping

Directions

  • Bring a large pot of water to a boil and cook the noodles according to package directions; drain, toss with a little olive oil, and set aside
  • While the water is coming to a boil, heat a skillet on medium-low
  • Add the butter, oil olive, garlic, and scallions to the skillet and simmer lightly for 5-7 minutes, stirring often; the garlic should barely sizzle here, you don't want it to brown
  • While the garlic is going, mix the fish sauce, oyster sauce, and sugar in a small bowl
  • When the garlic is cooked, bring the skillet to a medium-high heat and stir in the prepared sauce; let cook for 30 seconds
  • Add the prepared noodles and toss with parmesan cheese (optional); let the noodles cook for a minute so they soak up all that flavor
  • Top with fried garlic and serve immediately

Notes

  • You can use a lot of different kinds of noodles; Chuka soba noodles, egg noodles, Hong Kong noodles, spaghetti, or even angel hair pasta will work here.
  • This recipe can easily be doubled if you want leftovers.
