Jim's Bolognese Pasta Sauce

1 lb 80% lean ground beef
1 lb mild Italian sausage
1 lb 93% lean ground turkey
1 zucchini, diced
1 green bell pepper, diced
2 medium onions, diced
1 stalk of celery, diced
2 carrots, grated (do not peel)
4 slices thick cut bacon, diced
3-4 chicken livers, fat removed and finely diced
¼ cup white wine
4 cups of chicken stock
2 medium cloves of garlic, pressed
1 can tomato sauce, 15 oz
1 can diced tomatoes, 28 oz
3-4 diced fresh tomatoes
1 cup red wine
3 fresh bay leaves
2 fresh sprigs of rosemary, stem removed
Directions
- Brown beef, Italian sausage, and turkey in large pot and drain the grease
- In a separate pan, sauté the zucchini, green peppers, onions, celery, and carrots until soft and translucent
- On medium heat, combine the sautéed vegetables with the browned meat in the larger pot
- Crisp the bacon in the sauté pan, drain the grease, and add to the meat and vegetables
- Add chicken livers and white wine to pot and let simmer for 10 minutes
- Add garlic, chicken stock, and let simmer for until the liquid reduces by half
- Add tomato sauce and diced tomatoes and let simmer for 20 minutes
- Add red wine, bay leaves, and rosemary
- Reduce to low, cover, and let simmer for 10-12 hours stirring occasionally
