3 lbs stew meat
1 tbsp oil
1 large onion, diced
1 tsp garlic powder
1 head garlic, minced or pressed
2 tbsp tomato paste
1 can crushed tomatoes
2 tsp ground cumin
2 tsp salt
½ tsp black pepper
2 tbsp all-purpose flour
3 cups beef stock
Directions
- In batches in a Dutch oven, brown the stew meat over medium high heat, remove from pot and set aside
- Add onions, garlic, and garlic powder to Dutch oven and sauté until soft
- Add tomato paste, crushed tomatoes, cumin, salt, and pepper and stir
- Return beef and drippings, sprinkle the flour over the meat and mix
- Add the beef stock and mix well so there are no lumps
- Pre heat oven to 300 degrees
- Bring to a boil, cover, and move to oven
- Cook for 2 ½ hours or until meat is fork tender, stir every 30 minutes
- Taste and adjust seasonings if necessary
