Ingredients

  • 3 lbs stew meat

  • 1 tbsp oil

  • 1 large onion, diced

  • 1 tsp garlic powder

  • 1 head garlic, minced or pressed

  • 2 tbsp tomato paste

  • 1 can crushed tomatoes

  • 2 tsp ground cumin

  • 2 tsp salt

  • ½ tsp black pepper

  • 2 tbsp all-purpose flour

  • 3 cups beef stock

Directions

  • In batches in a Dutch oven, brown the stew meat over medium high heat, remove from pot and set aside
  • Add onions, garlic, and garlic powder to Dutch oven and sauté until soft
  • Add tomato paste, crushed tomatoes, cumin, salt, and pepper and stir
  • Return beef and drippings, sprinkle the flour over the meat and mix
  • Add the beef stock and mix well so there are no lumps
  • Pre heat oven to 300 degrees
  • Bring to a boil, cover, and move to oven
  • Cook for 2 ½ hours or until meat is fork tender, stir every 30 minutes
  • Taste and adjust seasonings if necessary
