Fresh Thai Cucumber Salad

Ingredients

  • ½ cup rice wine vinegar

  • 1¼ cup water

  • 7 tbsp white sugar

  • 1 tsp salt

  • 2 cucumbers, half-peeled deseeded and diced

  • ½ red onion, diced

  • 1 Roma tomato, deseeded and diced

  • 2 red jalapenos, halved and sliced into thin ribbons (optional for heat)

  • ¼ cut cilantro, with some extra for garnish

Directions

  • Combine the rice wine vinegar, water, sugar, and salt in a small sauce pan and bring to a boil, then reduce and simmer for 2-3 minutes; remove from heat and let the vinegar and water mixture cool completely
  • In a bowl combine the cucumbers, red onion, tomato, jalapenos, and cilantro
  • Pour the vinegar and water mixture over the vegetables and mix gently
  • Refrigerate for at least 1 hour before serving
