Fresh Thai Cucumber Salad

½ cup rice wine vinegar
1¼ cup water
7 tbsp white sugar
1 tsp salt
2 cucumbers, half-peeled deseeded and diced
½ red onion, diced
1 Roma tomato, deseeded and diced
2 red jalapenos, halved and sliced into thin ribbons (optional for heat)
¼ cut cilantro, with some extra for garnish
Directions
- Combine the rice wine vinegar, water, sugar, and salt in a small sauce pan and bring to a boil, then reduce and simmer for 2-3 minutes; remove from heat and let the vinegar and water mixture cool completely
- In a bowl combine the cucumbers, red onion, tomato, jalapenos, and cilantro
- Pour the vinegar and water mixture over the vegetables and mix gently
- Refrigerate for at least 1 hour before serving
