Sweet Potato Pie

1 lb sweet potato
½ cup butter, softened
1 cup granulated sugar
½ cup milk
2 eggs
½ tsp ground nutmeg
½ tsp ground cinnamon
1 tsp vanilla extract
1 9" inch unbaked pie crust
Directions
- Preheat oven to 350 degrees
- Boil sweet potato in skin 40-50 minutes
- Run cold water over potato; remove skin
- Mix potato and butter
- Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla and beat for several minutes
- Pour into pie crust
- Bake for 55-60 minutes
