Sweet Potato Pie

Ingredients

  • 1 lb sweet potato

  • ½ cup butter, softened

  • 1 cup granulated sugar

  • ½ cup milk

  • 2 eggs

  • ½ tsp ground nutmeg

  • ½ tsp ground cinnamon

  • 1 tsp vanilla extract

  • 1 9" inch unbaked pie crust

Directions

  • Preheat oven to 350 degrees
  • Boil sweet potato in skin 40-50 minutes
  • Run cold water over potato; remove skin
  • Mix potato and butter
  • Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla and beat for several minutes
  • Pour into pie crust
  • Bake for 55-60 minutes
