Brandied Sweet Potatoes

Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 2" chunks

  • ½ cup butter or margarine

  • ½ cup packed brown sugar

  • ½ cup brandy

  • ½ teaspoon salt

Directions

  • Boil sweet potatoes in a large pot of salted water until tender
  • In a large skillet melt the butter or margarine
  • Stir in the brown sugar, brandy, and salt until smooth
  • Add sweet potatoes and cook over low heat, stirring gently, until sweet potatoes are heated through and well glazed
