Baked Teriyaki Chicken

1 tbsp olive oil
1 tsp salt
1 tsp pepper
2 tbsp cornstarch
2 tbsp cold water
¼ cup white sugar
¼ cup honey
¾ cup soy sauce
2 tbsp apple cider vinegar
3 clove garlic, pressed
½ tsp ground ginger
¼ tsp ground black pepper
4 boneless skinless chicken breasts
Directions
- In a small saucepan over low heat, combine the cornstarch, cold water, sugar, honey, soy sauce, vinegar, garlic, ginger, and ground black pepper; let simmer, stirring frequently, until sauce thickens and bubbles
- Preheat the oven to 400 degrees
- Place chicken in lined and lightly greased 9x13 baking dish
- Brush chicken with the prepared sauce, turn over and cover with remaining sauce
- Bake in the preheated oven for 40 minutes, until no longer pink and juices run clear
