Mushroom Gravy

¼ cup butter
1 (16 ounce) package sliced mushrooms
Pinch of salt
¼ cup all-purpose flour, or as needed
1 qt beef stock
¼ tsp ground black pepper
¼ tsp dried thyme
Salt to taste
Directions
- Melt butter in saucepan over medium heat until it foams
- Stir in mushrooms, season with a pinch or salt, and simmer until liquid evaporates; about 20 minutes
- Stir in the flour; cook and stir for about 5 minutes
- Add 1 cup of beef stock, stirring briskly until incorporated, then pour in the remaining stock and mix thoroughly
- Add black pepper and thyme then stir to combine
- Reduce heat to low, and simmer until thickened, about 30 minutes, stirring often
