Mushroom Gravy

Ingredients

  • ¼ cup butter

  • 1 (16 ounce) package sliced mushrooms

  • Pinch of salt

  • ¼ cup all-purpose flour, or as needed

  • 1 qt beef stock

  • ¼ tsp ground black pepper

  • ¼ tsp dried thyme

  • Salt to taste

Directions

  • Melt butter in saucepan over medium heat until it foams
  • Stir in mushrooms, season with a pinch or salt, and simmer until liquid evaporates; about 20 minutes
  • Stir in the flour; cook and stir for about 5 minutes
  • Add 1 cup of beef stock, stirring briskly until incorporated, then pour in the remaining stock and mix thoroughly
  • Add black pepper and thyme then stir to combine
  • Reduce heat to low, and simmer until thickened, about 30 minutes, stirring often
