German Spaetzle Dumplings

1 cup all-purpose flour
¼ cup milk
2 eggs
½ tsp ground nutmeg
1 pinch freshly ground white pepper
½ tsp salt
1 gal hot water
2 tbsp butter
2 tbsp chopped fresh parsley
Directions
- Bring water to a high simmer in large pot
- Whisk together flour, salt, white pepper, and nutmeg
- Beat eggs together with milk and add to dry ingredients; mix until smooth
- Press dough through spaetzle maker, or a large holed sieve or metal grater
- Drop a few at a time into simmering liquid, cook 5 to 8 minutes, then drain well
- Sauté cooked spaetzle with butter in a frying pan
- Top with chopped fresh parsley and serve
