Olly's Favorite Blueberry Muffins

Ingredients

  • Muffins
  • 1½ cup flour

  • ¾ cup sugar

  • ½ tsp salt

  • 2 tsp baking powder

  • ⅓ cup vegetable oil

  • 1 egg

  • ⅓ cup milk

  • 1 cup fresh blueberries

  • Crumble Topping
  • ½ cup sugar

  • ⅓ cup flour

  • ¼ cup butter, cubed and very cold

  • 1½ tsp ground cinnamon

Directions

  • Muffins
  • Preheat oven to 400ºF
  • Combine flour, sugar, salt, and baking powder and whisk together in large bowl
  • Put the vegetable oil in a 1 cup measuring cup, crack whole egg into the cup, then fill the measuring cup with milk to the top; pour into the dry ingredients and mix
  • Fold in blueberries
  • Grease a 12-muffin tray with butter or spray
  • Divide mixture in the 12 muffin tray cups
  • Crumble Topping
  • In a bowl mix sugar, flour, butter, and cinnamon with a fork and sprinkle over muffins before baking
  • Bake for 20-25 minutes

Notes

  • The last 4 ingredients in the list (sugar, flour, butter, and ground cinnamon) are for the crumble topping.
