Squash Au Gratin

4-5 zucchini, thinly sliced
2 tbsp butter, divided
1 medium onion, diced
1 small green pepper, diced
2 tbsp tomato paste
½ tsp ground cumin
½ tsp salt
½ tsp pepper
dash tabasco
½ cup yellow cheese
½ cup bread crumbs
Directions
- Steam zucchini until tender
- Heat 1 tbsp butter in sauté pan on medium
- Sauté onion and green pepper until the onion is translucent
- Add tomato paste, cumin, salt, pepper, and tabasco and cook on a low heat for 5 minutes then set aside
- Drain and mash the zucchini
- In a bowl, combine the zucchini and onion/pepper mixture
- Spread zucchini mixture in a greased casserole dish and cover with cheese
- Spread bread crumbs over casserole
- Dot with remaining butter and bake at 325 degrees for 20 minutes or until slightly brown
