Squash Au Gratin

Ingredients

  • 4-5 zucchini, thinly sliced

  • 2 tbsp butter, divided

  • 1 medium onion, diced

  • 1 small green pepper, diced

  • 2 tbsp tomato paste

  • ½ tsp ground cumin

  • ½ tsp salt

  • ½ tsp pepper

  • dash tabasco

  • ½ cup yellow cheese

  • ½ cup bread crumbs

Directions

  • Steam zucchini until tender
  • Heat 1 tbsp butter in sauté pan on medium
  • Sauté onion and green pepper until the onion is translucent
  • Add tomato paste, cumin, salt, pepper, and tabasco and cook on a low heat for 5 minutes then set aside
  • Drain and mash the zucchini
  • In a bowl, combine the zucchini and onion/pepper mixture
  • Spread zucchini mixture in a greased casserole dish and cover with cheese
  • Spread bread crumbs over casserole
  • Dot with remaining butter and bake at 325 degrees for 20 minutes or until slightly brown
