Noodle Stir Fry

2 cloves of garlic, finely chopped
1 inch thumb of ginger, finely chopped
½ red onion or 1 medium shallot, sliced into bite-sized strips
1 red bell pepper, cut into bite-sized strips
100g broccolini, cut into bite-sized pieces
100g green beans, cut into bite-sized batons
2 green onions, cut into bite-sized batons
200g udon or rice noodles
1 tbsp soy sauce
1 tsp dark soy sauce
1 tbsp mirin
1 tsp oyster sauce
½ tsp sriracha
Splash of sesame oil
1 tbsp avocado oil
½ tsp sesame seeds
Directions
- Prepare the noodle according to the package instruction and set aside.
- Make a stir fry sauce by combining the soy sauce, dark soy sauce, mirin, oyster sauce, sriracha, and a splash of sesame oil in a small bowl.
- Preheat a nonstick pan or wok to medium heat.
- Add the avocado oil followed by the garlic, ginger, and red onions; sauté for about 1 minute.
- Add the red bell pepper, green beans, and broccolini; sauté for 3-4 minutes.
- Add the green onions; sauté for 2-3 minutes.
- Add the noodles and stir fry sauce; gently stir and sauté for another 2-3 minutes.
- Serve the noodles and sprinkle some sesame seeds on top.
