Noodle Stir Fry

Ingredients

  • 2 cloves of garlic, finely chopped

  • 1 inch thumb of ginger, finely chopped

  • ½ red onion or 1 medium shallot, sliced into bite-sized strips

  • 1 red bell pepper, cut into bite-sized strips

  • 100g broccolini, cut into bite-sized pieces

  • 100g green beans, cut into bite-sized batons

  • 2 green onions, cut into bite-sized batons

  • 200g udon or rice noodles

  • 1 tbsp soy sauce

  • 1 tsp dark soy sauce

  • 1 tbsp mirin

  • 1 tsp oyster sauce

  • ½ tsp sriracha

  • Splash of sesame oil

  • 1 tbsp avocado oil

  • ½ tsp sesame seeds

Directions

  • Prepare the noodle according to the package instruction and set aside.
  • Make a stir fry sauce by combining the soy sauce, dark soy sauce, mirin, oyster sauce, sriracha, and a splash of sesame oil in a small bowl.
  • Preheat a nonstick pan or wok to medium heat.
  • Add the avocado oil followed by the garlic, ginger, and red onions; sauté for about 1 minute.
  • Add the red bell pepper, green beans, and broccolini; sauté for 3-4 minutes.
  • Add the green onions; sauté for 2-3 minutes.
  • Add the noodles and stir fry sauce; gently stir and sauté for another 2-3 minutes.
  • Serve the noodles and sprinkle some sesame seeds on top.
